MO KITCHEN RECIPE:
GARLIC PUMPKIN TOAST

Feed the family with healthy, delicious beetroot hummus! Pair with chips or flatbread for a fantastic snack!
Serves 2
INGREDIENTS
1 tbsp Olive Oil
2 cloves Garlic
250gms Pumpkin
Naked Byron Vegan Basil Pesto
Fresh Basil Tips
Walnuts (handful)
2 slices of Sourdough or GF Bread
Salt & Pepper
METHOD
Mince 2 cloves of garlic and add to 1 tablespoon of olive oil. Set aside. Heat oven to 200 degrees.
Thinly slice pumpkin and lay out flat on an oven tray lined with baking paper. Pour garlic olive oil mixture over pumpkin, and season with salt and pepper.
Bake for 20 mins or until pumpkin is soft and tender. Set aside to cool.
Toast preferred bread, and spread a thick layer of Rosa's Bail Pesto. Layer pumpkin on top, and drizzle over olive oil.
Add a sprinkle of salt and pepper, garnish with fresh basil tips and raw walnuts.
