MO KITCHEN RECIPE:
GREEN GODDESS SALAD & DRESSING

INGREDIENTS: DRESSING

  • 1 cup coconut yoghurt

  • 1 cup fresh parsley

  • 1 cup mixed leafy herbs (dill, mint, tarragon, coriander)

  • 2 tbsp chopped chives

  • 2 tbsp fresh lemon juice

  • 1 tbsp extra virgin olive oil

  • 2 tsp capers

  • 1 garlic clove

  • ¼ tsp sea salt & pepper

INGREDIENTS: SALAD

  • 1 red onion

  • 1 large zucchini

  • ½ small green cabbage

  • 1 head broccoli

  • 1 can edamame beans

  • 1 cucumber

  • 1 cup spinach

  • 1 cup rocket

METHOD:

  1. Make the Green Goddess Dressing by combining the yoghurt, parsley, mixed herbs, chives, lemon juice and zest, olive oil, capers, garlic, salt and pepper in a food processor and pulse until well combined. Season to taste.

  2. Chop all salad veggies to desired size.

  3. Toss salad with spinach and rocket until it is all thoroughly mixed through.

  4. Add the Green Goddess Dressing to the top of the salad and toss through.

  5. Top with parsley and a dash of lemon zest and serve.
