MO KITCHEN RECIPE:
MOROCCAN PUMPKIN COCONUT SOUP

Craving something hearty to warm you up on the lead into Winter? Our flavourful Moroccan Pumpkin Coconut Soup is just the thing you need in your life! Perfect for freezing, reheating, lunches or dinner for the cooler nights!

INGREDIENTS:

  • 1 large brown onion

  • 1 leek stork, chopped

  • 4 cloves garlic, minced

  • 2 tbsp extra virgin olive oil

  • 1 large butternut pumpkin, peeled and diced

  • 2 potatoes, peeled and diced

  • 1l stock

  • 2-3 tbsp moroccan seasoning

  • 1/4 coconut cream

METHOD:

  1. Sautee onion, leak and garlic in a large saucepan with olive oil.

  2. Add the pumpkin and potatoes, cook for a further 3 minutes.

  3. Add the stock and moroccan seasoning, boil until the vegetables are nice and soft.

  4. Once soft blend everything together with the coconut cream, and season to taste.

SERVING SUGGESTION:
