MO KITCHEN RECIPE:
ULTIMATE VEGAN TART

The perfect recipe for the Ultimate Vegan Tart, designed to knock the socks off your friends and family!
Serves 6
INGREDIENTS
Vegan Puff Pastry
1 Beetroot
1 Zucchini
1 Eggplant
2 thick cut wedges of Pumpkin
2 cloves of Garlic
2 tbsp of Olive Oil
YAY! Vegan Feta
Rosa's Vegan Pesto
Salt & Pepper
METHOD
Mince garlic cloves and add to 2 tablespoons of olive oil. Set aside. Preheat oven to 180 degrees.
Cut beetroot, zucchini, eggplant and pumpkin into 1 cm cubes. Place on oven tray lined with baking paper. Cover in garlic/olive oil, season with salt and pepper.
Cut 1 sheet of puff pastry into 4 squares. Prick squares with a fork several times. Place on top of baking paper on an oven tray. Bake tray of pastry squares and the cubed vegetables for 20 mins.
Take out both trays and allow to cool a little. Flip pastry squares over so the less cooked side is facing up. Top with pesto, and baked veggie cubes.
Bake for another 10-15 mins, or until pastry is golden. Remove from oven, and top with YAY! Feta and a drizzle of pesto. Serve fresh and enjoy!
