MO RECIPES: RAW DETOX SALAD

The weather is heating up and what better way to detox than utilising your daily food intake to give you the best nutrients and goodness your body needs! So, we have pulled our customer favourite from MO Kitchen to bring you our delicious Raw Detox Salad.

GF | DF | VEGAN | FODMAP | OIL-FREE

INGREDIENTS:

  • 1 cup sunflower seeds

  • 1 tsp sea salt

  • 1 head cauliflower

  • 1 head broccoli

  • 5 large carrots

  • 1 cup parsley

  • ½ cup currants (or raisins, or cranberries)

  • 1 tbsp sea salt

  • Juice of 3-4 lemons

METHOD

  1. Soak the sunflower seeds in a bowl of filtered water that has one teaspoon of sea salt added to it. Leave for 7 hours before draining well.

  2. Trim the cauliflower and broccoli into smaller florets. Peel and roughly chop the carrots. Pick off the larger stalks from the parsley, but you can leave most of them in as we blitz it all anyway.

  3. Blitz the cauliflower, broccoli, carrots, and parsley in a food processor until the mixture resembles coarse breadcrumbs. Tip the mixture into a large bowl.

  4. Add the drained sunflower seeds, currants and salt to the bowl. Slice the lemons in half and squeeze in the fresh juice (catch the seeds!)

  5. Mix well to combine before serving.
