· Finely slice one Fennel Bulb

· Finely slice 1/2 Red Onion

· 1 cup of Love Your Guts Beet & Ginger Kraut

· 2 Oranges, peeled and chopped into chunks

· Handful of chopped Parsley

· Mix together and season with Olive Oil, Vinegar, Salt & Pepper

· Sprinkle with Dill or Mint
