PROTEIN PACKED HOT CROSS BUNS

With Easter just around the corner, the thought on everyones minds is, of course…hot cross buns! and this year, we're taking a classic favourite to new heights. I'm excited to share with you a recipe for Protein Hot Cross Buns with Chocolate Chips.

This recipe combines the warmth of traditional hot cross buns with the sweet surprise of chocolate chips, all while packing a protein punch. Perfect for fitness enthusiasts and chocolate lovers alike, these buns are sure to become a new Easter tradition in your home. Let's get baking!

Here’s what you’ll need:

  • For the buns:

    • 300g whole wheat flour (for a boost of fibre)

    • 200g PranaOn's French Vanilla Power Plant Protein 

    • 1 packet (7g) instant yeast

    • 1 tablespoon cinnamon

    • 1 teaspoon mixed spice (or a homemade blend of nutmeg, cloves, and allspice)

    • 50g stevia (or your preferred low-calorie sweetener)

    • 300ml almond milk, lukewarm (or your milk of choice)

    • 1 large egg (or substitute with a flax egg for a vegan version)

    • 50g unsweetened applesauce (a great butter substitute)

    • 75g dried mixed fruit (e.g., raisins, sultanas, currants)

    • 75g dark chocolate chips 

    • Zest of 1 orange

  • For the cross:

    • 50g protein powder

    • Water (add gradually until it forms a thick paste)

  • For the glaze:

    • 2 tablespoons icing sugar (or sugar-free option if you prefer)

    • 1 tablespoon water

INSTRUCTIONS:

  1. Prepare the Dough: In a large mixing bowl, whisk together the whole wheat flour, protein powder, instant yeast, cinnamon, mixed spice, and stevia. Slowly add the lukewarm almond milk and egg, mixing until the dough begins to form. Incorporate the unsweetened applesauce, dried mixed fruit, dark chocolate chips, and orange zest, then knead for about 5 minutes until the dough is smooth and elastic. Cover the bowl with a damp cloth and allow the dough to rise in a warm place for 1 hour, or until it has doubled in size.

  2. Shape and Proof the Buns: After the dough has risen, punch it down and divide into 12 equal portions. Roll each portion into a bun shape and place on a baking tray lined with parchment paper, ensuring there's space between each bun. Cover again with a damp cloth and let them rise for another 30 minutes.

  3. Preheat Oven and Prepare Crosses: Preheat your oven to 200°C (390°F). Combine the protein powder and water to make a thick paste for the crosses. Use a piping bag to pipe crosses over the buns.

  4. Bake: Bake in the preheated oven for 20-25 minutes, or until they turn golden brown.

  5. Glaze: Heat the apricot jam and water in a small saucepan over low heat until melted. Brush this glaze over the warm buns as soon as they come out of the oven.

PROTEIN PACKED, PLANT-BASED BAKED OATS

Baked Oats... or as we like to refer to it; cake for breakfast! 🍰

The most delightful and mouthwatering baked oats that are bursting with protein, fibre, energy, and vitamins. This recipe is so versatile—you can make two small dishes to share or indulge in one large portion. Get ready for this flavour-packed adventure!

Here’s what you’ll need: 

1/2 cup of oats, blitzed into flour 🌾
1/2 large, ripe banana 🍌
1/2 cup of plant milk 🥛
1/2 Serve (22g) of @pranaon plant power protein, in your favourite flavour 💪
2 TSP of your choice of sweetener (we’re all about that raw honey goodness 🍯)
A pinch of baking powder and salt
+ your extras! We went all out with raspberries 🍓 and milk chocolate chips 🍫!

Now, preheat your oven to 180 degrees Celsius for 10 minutes, and then pop your scrumptious creation in for 15-20 minutes, or until it reaches that perfect golden brown on top. Get ready to dive into a breakfast delight! 🤤

MATCHA MINT PROTEIN CHIA PUDDING

Chia seeds, those tiny powerhouses of nutrition, have been making waves in the health and wellness world, and for good reason.

Packed with essential nutrients, including fibre, omega-3 fatty acids, antioxidants, vitamins, and minerals, chia seeds offer a plethora of potential health benefits. Research suggests that these seeds may play a role in promoting heart health by reducing risk factors like high blood pressure and inflammation. Additionally, their high fibre content can aid in weight management by promoting a feeling of fullness and reducing calorie intake.

Chia seeds are also known to support digestive health and can serve as a valuable source of antioxidants that protect cells from oxidative damage. As you explore ways to enhance your diet and boost your overall well-being, consider incorporating chia seeds into your meals for a nutritious and delicious addition.

If you’d like to give it a go you’ll need:

  • 1tbsp of chia seeds

  • 1 serve of PranaOn Power Plant in French Vanilla

  • 1/2 serve of PranaOn Super Greens in Fresh Mint
    (more or less depending on how you like the taste strength)

  • 1/3 tsp of pure matcha (again change if needed)

  • 1tsp of honey (more/less)

  • soy milk (around 1/2 cup, again depending on how you like your consistency)

  • 1/2 cup of 0% fat plain Greek yogurt or coconut yogurt (half to mix in and half to serve on top) but keep in mind the macros will change.

  • + Strawberries to serve 🍓

ENERGISING VEGAN APPLE CUSTARD MUFFINS

Looking for a delicious and nutritious vegan treat? These Apple Custard Muffins, featuring PranaOn's Power Plant protein powder, are the perfect guilt-free indulgence.

Packed with plant-based goodness, these muffins are not only a delightful snack but also a fantastic way to fuel your body.

Here’s what you’ll need: 

  • 1 cup all-purpose flour

  • 1/2 cup PranaOn Apple Custard Pie Protein Powder

  • 1/2 cup almond flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1 tsp ground cinnamon

  • 1/2 cup unsweetened applesauce

  • 1/2 cup maple syrup or agave nectar

  • 1/4 cup coconut oil, melted

  • 1 tsp vanilla extract

  • 1 cup diced apples (peeled and cored)

INSTRUCTIONS:

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease each cup.

  2. In a large mixing bowl, whisk together the all-purpose flour, PranaOn Apple Custard Pie Protein Powder, almond flour, baking powder, baking soda, salt, and cinnamon.

  3. In another bowl, mix together the applesauce, maple syrup or agave nectar, melted coconut oil, and vanilla extract.

  4. Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.

  5. Gently fold in the diced apples until evenly distributed throughout the batter.

  6. Spoon the batter into the muffin cups, filling each about 2/3 full.

  7. Bake in the preheated oven for 18-22 minutes or until a toothpick inserted into the center comes out clean.

  8. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
